Instructions
- Make the Moroccan seasoning blend. In a small bowl, mix together the Moroccan seasoning blend ingredients, then set aside.
- Cook the couscous according to package instructions.
- Prepare the salad. To a large salad bowl, add the cooked couscous, apple, raisins, olives, pistachios, vegan feta, parsley, mint, salt, and pepper.
- Make the dressing. In a small bowl, whisk together the dressing ingredients.
- Pour the dressing over top of the salad. Mix well, and enjoy.
