Anise Doughnut

This morning, we baked these doughnuts that are loosely based on a recipe from The Vegan Pastry Bible. We didn’t have anise liqueur (substituted anise extract) and we also wanted to bake instead of fry.

Instructions

  1. Whisk together flaxseed and water in a small bowl and let sit for 5 minutes.
  2. Mix all dry ingredients in a bowl, add orange zest, water, anise and vanilla extract, then pour in olive oil. Knead until homogeneous and cover with film.
  3. Grease your hands and shape dough into 35-40g balls. Make a hole in the center of each to form doughnuts and place on greased parchment paper.
  4. Oil a doughnut pan, transfer doughnuts to pan, and bake at 350°F for 10 minutes.
  5. Mix sugar and cinnamon, then coat the hot doughnuts. Serve at room temperature.
