Anise Doughnut
This morning, we baked these doughnuts that are loosely based on a recipe from The Vegan Pastry Bible. We didn’t have anise liqueur (substituted anise extract) and we also wanted to bake instead of fry.

Instructions
- Whisk together flaxseed and water in a small bowl and let sit for 5 minutes.
- Mix all dry ingredients in a bowl, add orange zest, water, anise and vanilla extract, then pour in olive oil. Knead until homogeneous and cover with film.
- Grease your hands and shape dough into 35-40g balls. Make a hole in the center of each to form doughnuts and place on greased parchment paper.
- Oil a doughnut pan, transfer doughnuts to pan, and bake at 350°F for 10 minutes.
- Mix sugar and cinnamon, then coat the hot doughnuts. Serve at room temperature.
